I LOVE beets! Their benefits are endless & they are such a versatile vegetable to add to our diets.
For example, you can slice them thinly and coat them with coconut oil and spices and bake them until crisp. You can shred them in the food processor and add them as is to your salad, or cook the shredded pieces with your rice (it will give your rice a beautiful red/purple color). You can even add them raw to your smoothies, and that's what we are doing today.
Beets are well known for their abilities to help lower blood pressure, boost stamina, load your body with antioxidants to fight free-radicals that are linked with aging, decrease inflammation in the body, and help detox your blood and liver, just to name a few. (Quick tip: after a night of drinking, start the following day with beet juice to help support your liver recovery).
Now let's make that smoothie!!!
*Recipe makes 2 of the cups shown in the photo above.
- 1 medium beet, cubed
- 1 tbsp of Go Raw Super Simple granola
- 1 cup of coconut milk (add more or less depending on your desired consistency)
- 1/2 banana
- 3-5 ice cups
- 1 handful of spinach
- 1 scoop of Garden of Life's raw & organic protein powder
Optional add-ons for an extra boost:
- 1/2 tbsp spirulina
- 1 tsp maca
- 1 tbsp chia seeds
- Add the first 3 ingredients into your blender and blend until smooth.
- Add the rest of the ingredients and blend until smooth.
