Anti-inflammatory Ginger Pineapple Smoothie

This smoothie is an oldie but a favorite of mine. It's an amazing anti-inflammatory power house!

If you have been following my journey on Instagram, you might know that I suffered a concussion two weeks ago that left me with painful headaches and muscle spasms down my neck and back. I was given anti-inflammatory medicine (Ibuprofen), and even though I am not a big fan (at all!) of taking medicine, I knew I needed it.

At the urgent care, my doctor saw in how much pain I was. Upon giving me the medicine and instructing me to take them every 8 hrs (as needed), she said it would be another 2-3 weeks of healing for the pain to go away. 

If you know me, you know I took the medicines home, BUT first I made a stop at my local Whole Foods store. Yes, I was going to take the medicine; but, I was also going to give my body every possible superfood and anti-inflammatory natural food to speed up the healing and decrease my medication intake. 

There, I bought fresh ginger, turmeric and pineapple (all 3 have powerful anti-inflammatory properties), and then stopped by Jugo Fresh (local, organic, cold-pressed juice bar in Miami) for a handful of their anti-inflammatory Saca-Lo shots (it has lime, lemon, ginger, turmeric, cayenne, echinacea extract, oregano oil, honey). 

I am happy to say that within a week all of my symptoms and pains are gone! ;] Never under estimate the healing powers of fresh, whole foods!

The smoothie recipe below helped me in my healing. 

 

NOTES:

*The pineapple and ginger are the main anti-inflammatory ingredients in this smoothie.

* 2-3 cups of spinach might sound like a lot, but the taste is completely masked by the other ingredients. The spinach also balances out the fruit in the smoothie by regulating your blood sugar levels.

* I used homemade almond milk (recipe here), but you can use any plant-based milk of your choice.


RECIPE

Makes about 18 oz

INGREDIENTS

- 2/3 CUP HOMEMADE ALMOND MILK 

- 1 CUP FROZEN PINEAPPLE

- 1/2 BANANA

- 1 INCH PIECE OF FRESH GINGER

- 3 LARGE LEAVES OF FRESH MINT

- 2 LARGE HANDFUL OF SPINACH (ABOUT 2-3 CUPS)

- 2 DATES

- 1/3 CUP ICE

 

HOW TO:

Add all ingredients to your blender. Blend. Enjoy. ;]
